Fresh mozzarella and flavorful tomatoes, carefully selected wheat and yeast. Adjusting water, salt, fermentation time, and temperature delicately according to the season, baked at high temperatures in a wood-fired oven. The surface is crispy, while the inside has a unique chewy texture. Olive oil, moisture, and tomato sauce emulsify smoothly at high temperatures, creating a fragrant and well-balanced flavor. SAVOY opened in April 1995 and boasts immense popularity in the fierce pizza battleground of the city center. While based on authentic Neapolitan pizza, it is characterized by its pursuit of flavors tailored to Japanese tastes. The fermentation method adjusted according to the seasons and the high-temperature baking in a wood-fired oven perfectly emulsify olive oil, moisture, and tomato sauce, resulting in a low-carb and healthy pizza.
